The speciality
French onion soup in Montmartre.
Eugène's, on Place du Tertre, from 8am to 11pm.
Chez Eugène, a wine bistro at 17 place du Tertre in Montmartre, serves a homemade gratinated French onion soup every day from 8am to 11pm: house-made stock, fresh onions, bread and Cantal AOP cheese gratinated to order. €14. The French daily Libération published the recipe in July 2026. No booking needed at the counter, a three-minute walk from the Sacré-Cœur.
How we make it
The recipe for Eugène's French onion soup
Yellow onions sliced thin and cooked slowly until soft and golden. A veal stock made in our kitchen, not a powdered base. A splash of wine. Bread, and Cantal AOP cheese on top, gratinated under the salamander grill when you order, never before: that's why it stretches when you lift the spoon. When the Tour de France came through Montmartre in July 2026, Libération asked Julie for the recipe for its “Recipes of the Tour” series. We gave the whole thing.
Price and hours
€14, from 8am to 11pm, every day
The onion soup is on the menu all year round, summer and winter, at €14. It's ready from opening time at 8am, which probably makes it the only French onion soup in Paris you can have for breakfast, and it's served until 11pm, when the kitchen closes. No break in between. In the morning, until 11:30am, it also comes as the Happy After: the soup and a glass of wine from our selection for €18. At the counter, in the dining room or on the terrace, same price, service included.
When to have it
At breakfast, after the climb, or at 11pm
There are three schools. Those who climb the hill early and have it at 9am on the terrace, with a coffee, while the painters set up. Those who have it at lunch or dinner as a starter, before a beef and carrot stew. And those who have it at 11pm, after their own shift, with a glass of white. All three are right.
What to drink
Which wine goes with French onion soup
A dry white with a bit of tension, to stand up to the Cantal and the stock: that's what Julie pours with it most often. Ask whoever is at the bar, there's always a white by the glass for this, from €7. The cellar's 800 references are there if you want to go further.
Where
French onion soup on Place du Tertre, three minutes from the Sacré-Cœur
Chez Eugène is at 17 place du Tertre, the painters' square, 250 metres from the basilica. Métro Abbesses or Anvers then the funicular, or the Montmartrobus, Norvins stop. The soup is also a good reason to climb up in winter, when the square belongs to the people who live here.
Why this one
Why people call it the best French onion soup in Montmartre
We don't say it, others do. Libération wrote that we “make everything in house” and printed the recipe; Le Carnet calls us “a real connoisseurs' table hidden behind its touristy setting”. What we can say ourselves: the stock is made here, the onions are fresh, the cheese is a Cantal AOP, and the gratin is done to order. On Place du Tertre, that's not the rule.
A word from Julie
It's the dish that goes out first in the morning and last at night. We serve thousands a year, and yet every gratin goes under the salamander when it's ordered, not before. Some people have it with a glass of white at 9am. We don't judge, we pour.
