The cellar

The highest wine cellar in Paris.

At the top of Montmartre, more than 7,000 bottles are sleeping. 800 wines, all organic, biodynamic or natural, by the glass, at the table or to take away.

Jura, Loire, Rhône, but also Japan, Hungary, Australia. Two things in common: each one was chosen by hand, and we would rather open them than show them off.

What we pour

Living wines

Wines made by growers who go along with the grape rather than correcting it: they watch what happens in the vineyard and step in as little as they can. Each bottle carries the intentions of one year, the choices of one estate, the constraints it had to work with. The same cuvée, next vintage, will have a character of its own. That's why we tell you about the person behind the wine, their choices, the story of the grape, rather than the label.

How we choose

At theirs, between two rows of vines

We don't pick from a catalogue. We go and see them, taste the new vintage, ask how the vines are doing. Some bottles we wait years for: an allocation has to be earned. The cellar was built that way, on trust, with about a hundred estates. When they come up to Paris they drop by to see how their wine travelled and what people say about it. And sometimes the stars line up: a winemaker passing through finds out that the next table is drinking his bottle. The conversation usually outlasts the bottle.

A few bottles you'll find here

  • Bottle : Reverb

    Reverb

  • Bottle : Cinabre 2024

    Cinabre 2024

    Jonathan Maunoury · Saumur, Loire
